Handmade Oatmeal Packets

Hey Everyone,

This post is off the stamping topic but, I like to share food tips when I can. 🙂

When the weather starts turning colder I start to crave Oatmeal and NOT that stuff out of the pre-made packets at the grocery. I make my own quick to whip up packets with all the goodness of simple ingredients. Let me tell you, you can make up homemade oatmeal packets for about $3 for 20. That’s probably less than you would pay for a little box of the pre-made ones at the store. Better yet, you get to put into the bag what you like.

This is our favorite oatmeal packet:

1/4 cup quick-cooking oats

2 teaspoons brown sugar

1/4 teaspoon cinnamon

1-2 tablespoons rasins

Line your sealable sandwich bags up and put your ingredients in each one. I do this the assembly line way by putting the oatmeal in each bag then move on to the next ingredient. I continue until I have everything in the baggies. Roll them up and seal shut.

I store mine in a large canning jar with a tag on it. The back side of the tag says 1/2 cup water, microwave 1-2 minutes.

Quick simple yummy goodness, mmmmm. We like to chop up 1/2 of an apple and put in it before microwaving, wonderful hardy breakfast.

Now on to my favorite thing to do, stamping! I’ll be back in a bit with today’s project.

Card Class Cookie Recipe

Hello there,

I made these Oatmeal Caisins White Chocolate Cookies for my last card class and they were a hit, not just with my class attendees but with Russ and I as well. Let’s just say they went really fast! So fast, I thought I would share the cookie recipe here with you. 🙂

Oatmeal Craisin White Chocolate Chip Cookies

2/3 cup margarine softened

2/3 cup brown sugar

2 large eggs

1-1/2 cups old-fashioned oats

1-1/2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1 5 ounce package Craisins

2/3 Cup White Chocolate Chips

Preheat oven to 375. Using an electric mixer beat margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to margarine mixture in several additions, mixing well after each addition. Stir in craisins and chips. Drop by round teaspoonfuls onto uncreased cookie sheets. Bake for 10-12 minutes or until golden brown Cool on wire rack. Makes 2 1/2 dozen.

Kitchen Share – The Best Freezer Garlic Bread

Boy you just never know what you will find here on blog. Sorry, I just love to share.

I just came into my craft room to start stamping and I decided to share with you what I just made in the kitchen. This is something I always keep on hand and you will too if you try it. It’s Freezer Garlic Bread. So easy to make and it is so good. It’s made up in slices so you only take out of the freezer what you will use so there is no waste. 🙂

Ever see those loaves of 16 inch Italian Bread at the store on sale. Snatch a few of them up. I picked these up from Sam’s Club today. Sometimes you can get second day loaves of Italian bread for 50 cents each. This is a great recipe to use with those.

This is what you will mix together for the spread for 1 loaf:

1 stick (8 Tbsp) Salted Butter at room temperature

2 Tbsp Olive Oil

4 Cloves Garlic (I used the mince garlic in the jar)

1/4 tsp Salt

1 Tbsp dried Parsley

Stir your spread items together and slice your bread into 1″ thick slices and put the spread on one side of each. Go ahead and slather it on!

I freeze mine by putting 4 pieces in a quart freezer bag and then put all of my quart bags in a 2 gallon bag and then in the freezer they go.

To cook the frozen slices of garlic bread, preheat the oven to 400 degrees. Take as many slices out of the freezer as you would like and place them on a baking sheet. Bake for 10-12 minutes, or until the edges are golden brown. Delicious!

On another note. . . .

I do a whole lot of canning and storing food away during the Summer when my garden is exploding with produce, but I also do some canning during every season. Here is one that is perfect for Winter.

This week I canned beans, beans, beans. . . .Pinto, Navy and Black Beans. I didn’t grow them, I just picked up bags of dried beans when I caught them on sale. If you are anything like me, when you see a recipe that calls for beans you pass on it if you have to wait to soak your beans so they are usable, or pay a very high price to purchase your beans already canned. You can can beans yourself for about 25 cents a can and it is so easy. This is what I do.

Sterilize your jars, bands and lids. Rinse your dried beans and pick out anything that shouldn’t be in them. In a pint jar add 1/2 a cup of beans, 1/2 tsp canning or kosher Salt to your jar and fill the jar up with water, leaving 1″ head room (space at top). That 1/2 cup of beans will fill the jar, they expand a lot!

Process your beans in a pressure canner for 90 minutes at 10 pounds of pressure, here in Ohio. You must use a pressure canner. You cannot use a water bath canner for this.

I have an enormous pressure canner, because I can a lot! My pressure canner holds 18 pint jars. There are much smaller pressure canners out there. They are a great investment and it will last you a life time.

After 90 minutes, let the pressure in your canner drop to zero and then take your wonderful, ready to use canned beans out of the canner. I canned 36 jars in a matter of an afternoon saving me loads of money, at least $36 dollars. 🙂 The next day my beans were put on my top pantry shelf. I have all the beans I need for a really long time to add to any recipe I find.

Fresh Bread, MMMMM

Hello there,

I have many, many hobbies and interest. Stamping being #1! But, my next interest is cooking. I love to cook and I try to cook things from scratch. So each week I make bread. I use the same recipe for a loaf of bread as I do for hamburger buns and hot dog buns. It just depends on the shape you make them into as to which one you are making. There is just my darling, Russ and I here so we don’t go through bread very fast. I put at least half of the bread that is baked in a freezer bag and into the freezer and pull it out as needed. Believe me it is way cheaper to bake your own bread and you will know just what is in it (no preservatives!). Bread thaws very quickly too. Do you ever wonder how the bread you buy from the store can stay fresh feeling for a week and a half? It’s a little scary to me to think of what chemicals are used to allow that. Here is my recipe if you wish to try it. 🙂 Note: you will want to use a mixer with a dough hook.

Basic White Bread

2 1/4 tsp. (1 package) active dry yeast
2 cups warm water, not hot
1 T. sugar
5 – 5 1/2 cups flour, I prefer bread flour
1 1/2 tsp. salt
2 T. Softened Butter

In your mixing bowl, combine the yeast, water, and sugar; let stand until bubbly, about 10 minutes.

Add 3 cups flower, salt and butter to the yeast mixture and beat at low speed with dough hook until incorporated. Add 2 more cups of flour (total of 5 cups) and turn mixer up to medium speed. The dough should come together if it is sticking to the bottom of the mixing bowl add an additional 1/2 cup of flour. Mix dough for 7 minutes on medium speed.

Add a teaspoon of Olive Oil to a large mixing bowl and smear it all over the inside of the bowl with your hand (before washing your hand add olive oil to your lips for softness, lol). Turn the dough out of the mixer bowl into your hand and make it into a ball, it should be just slightly sticky. If to sticky to work with add just a dusting of flour. Put the dough into the Olive Oil coated bowl and turn it so the Olive Oil gets on all sides of the dough ball. Cover with a bread cloth or clean kitchen towel. Put in a warm non-drafty area for 1 hour or until double in size.

For two loaves of bread, divid dough in half and make into loaf shapes and put in greased bread pans. For hamburger buns, make little 1 1/2 to 2″ dough balls and put on greased cookie sheet and pat the balls down flat. Cover and rise bread 45 minutes or until double in size.

Bake loaves at 400 degrees for 25-30 minutes. Buns pat them down a bit again and bake for 15 minutes.

Remove from oven and turn out onto a wire rack to cool Immediately brush tops with melted butter if desired. Seriously, I just take a stick of butter and rub it on the tops of my bread, no mess or additional dishes.

After making this a couple of times you will make it without even looking a recipe. 🙂

Leaves Bathed in Light – Stampin’ Up! Card

Hello there,

Light coming through leaves are for some reason calming and comforting. It’s a wonderful image to have on a Sympathy card. I created this branch of leaves using the Stampin’ Up! Vintage Leaves stamp set (item 138802). I used some simple coloring techniques in order to make the leaves look more realistic.

On Another Note. . . . .

This Summer has been a wacky kind of busy 3 months. My garden has done really well and therefore, I have been super busy putting up all of the fruits of my labor.

Here are a few photos of what I have been up to. . . . . .

A couple of my shelfs of yumminess.

BBQ Sauce and Sloppy Joes.

Carrots, Carrots and more Carrots.

Lots of Pickling going on. 3 different types of pickles and picked jalepenos.

Onion crop was excellent. Here they were drying before storage.

My peach trees are too small to get much fruit from so I picked up some really good peaches from a road side stand and canned peaches, peach salsa, peach jam and started some peach wine.

I grew corn for the first time this year. 🙂

I’m still canning pasta sauce, tomatoes and salsa and will be until the tomato plants give up for the summer.

Fresh basil made up a lot of wonderful pesto for the freezer.

I snuck in some canning of chicken broth one day when the canner was sitting still at a rare moment from the veggies.

Bumper crop of green beens, so many that I canned up all we could possibly eat and then started giving them away. Candied Jalapeños too, mmm.

There is really not very many days that I don’t have my canner going so there is so much more that I have canned up this season that I didn’t take photos of. Needless to say it has been a terrific garden season!

Also I’ve been playing mommy to 1o new baby chicks. Sadie thinks they make for great kitty tv. 🙂

So please forgive me if I haven’t shared much about what has been happening around here lately, like I said, it has been a crazy kind of busy Summer. Now back to the garden. . .

Yesterday I was in our little local grocery store and I always check out the bargain bin, it was a gold mine of strawberries. Bargain bin fruit is fruit that is on the verge of being too ripe but not quite there yet. I purchased 10 lbs of strawberries for $6. That is quite the deal. I took those berries and made 4 pints of strawberry jam and 7 quarts of strawberry pie filling when I got home from the store. Not a bad $6 investment, right? Just remember, when you buy up those bargain bin fruits be sure you can drop everything and get them canned or frozen right away, that’s why they were in the bargain bin, they can’t hang around in your frig.

Those jars of strawberry goodness will be quite welcome in the dead of winter, mmmm.

Artistically Asian – Stampin’ Up! Card

Hello there,

I put the first bit of ink on my new stamp set, Artistically Asian today. Another wonderful stamp set that has some very useful sentiments in it and nice calming images.

This stamp set’s images look very nice as silhouettes, which I love to use in scenes, so dramatic! Also, so easy, since you don’t have to worry about coloring the images, rock! That is just how I used one of the images today in my project. I hope you like it and find yourself inspired to get inky today.

On another note. . . . . .

I recently had a jam session, lol. Not musically, but by really making and canning jam. I love to make jam this time of year when the cherries and berries are in abundance. For one, it’s great to have your own jam to eat all year and plus, they make great gifts.

A little reminder, to label your jars easily, punch or die cut 2.5″ circles from card stock and put them under the top ring of your jar lid. It will fit nicely, the ring holds it on and there will be no label to have to scrub off of your canning jar when you empty that yummy goodness.

I hand write on my circles, but you can surely use a word processing program and print it out on card stock and then die cut or punch the circles out. Note, the 2.5″ circle fits perfect for the regular mouth jars, you will need larger circles for wide mouth jars.

Salad, Salad, Salad

Hi All,

It’s been a crazy busy day already today. Mondays always are, right? It is 10:00 a.m. and I’ve been to the gym, grocery, put dinner in the crock pot and washed the car. My feet sure have hit the floor running, so much to do.

I have been losing weight, 26 lbs since July in fact, woohoo! I have much, much more to lose but at least the scale is going in the right direction now.

This morning I wanted to share with you a little tip on preparing salads. If you are like me, you bring home fresh veggies and put them in the vegetable crisper in the refrigerator and then promptly forget about them and then throw them away the next time you come home with fresh veggies. Because I was to lazy to pull out all the ingredient to make a salad every day. Well here is a way to save you some money, time and your waist line.

The first thing you do when returning home from the grocery is to pull out your veggies from the grocery bags, put them on the counter, clean them, and put them right into quart canning jars. Layer the veggies in your jars according to firmness. Firmest veggies on the bottom. These will keep for some time in the refrigerator on the top shelf, right where you will see them every time you open that refrigerator door. They are super easy to have for lunch or dinner. Pull one out, add salad dressing, eat from the jar or get fancy and use a plate, lol.

You can put anything you like in them, but skip the croutons, they get soft. Grill chicken is great in these. 🙂

Carrots, Tomatoes and Jars, Oh My!

Hello there,

If you follow my blog you probably already know that I love to grow and can my own veggies. I’m not going to lie to you, it’s hard work. Boy is it worth it though in the Winter when you are eating your canned vegetables that taste very near what they tasted like right out of the garden with no preservatives and other yucky chemicals added.

Have you ever thought of the energy that it takes a gardener to grow and preserve their harvest. As I was canning this week that was very much on my mind. For instance, this is what I did to eventually have dozens of jars of carrots for Winter.

Prepared the garden for seeding, planted the seeds, spent months watering and weeding those carrots.

Dug them up.

Scrubbed them until they were gleaming.

Peeled and chopped them up.

Canned them and then sat back for a just a moment and marveled at what I had achieved, because it was off to the next canning project, Spaghetti Sauce.

Many, many jars of Spaghetti Sauce and Salsa that used up many of the tomatoes, onions and peppers that I grew.. .. . . . .Pears should be ripe soon, grin. I just love this!

So that is what I have been up to for the past few days. So how does your garden grow?
