Salsa Anyone!!!!!

I’m having to take a bit of a break from blogging.  You see, my veggies from my garden just won’t wait until it is an appropriate time for me to can them.  I have to work on the veggy’s schedule, lol.    Really, Russ and I have been so blessed with an aboundance of tomatoes, peppers, zuchini, squash and cucumbers.   Our garden has really been producing.

Yesterday I made and canned two different Salsa’s (mild and hot) and multiple loaves of zuchini pineapple bread.  Most of the bread will be frozen for future use, yum.  Today I’ll make zuchini cookies, I think.  Got to try to keep up.. . . .   So how is your garden doing?

As you see I made simple, simple tags using Stampin’ Up! punches.  The tops were also done with punches and stamped with “Delishously Made for You” from the Stamp set “Creatively Yours”.

I must get back in the kitchen.

    The salsa looks delish! I have an abundance of tomato, cucumber, zuchinni, okra and green beans RIGHT NOW. The fridge is so full I can barely close it! Time to make relishs & salsa and can. Looks like a busy weekend. Oh and I love the fun tags on your jars, looks like they are ready for gift giving.

    Just curious, what variety of tomatoes did you plant? All of mine are splitting at the stem end, haven’t gotten one perfect one like in your photo. Still delish, but I lose about one third of every tomato. Need to try another variety next year. Love the labels, are you going to share your recipe?

    I wish I was lucky enough to have my tomatoes split. I had a handful of tomatoes, no cucumbers, no zucchini, 2 bell peppers, some hot peppers, 10 potatoes from 8 plants, no cantaloupe, sorry looking carrots and a partridge in a pear tree. Except the pear tree died. I guess Texas is a little too hot for plants.

    Oh Mickey, sounds delicious! I never heard of zucchini cookies, could you share the recipe?
    I only have some pityful hot peppers and even the small cucumbers don’t give many fruits…

    We love salsa…would love to know your recipe for the hot variety. We planted “super-sonic” tomatoes this year. They are very good, very meaty. Highly recommend them!

    I wish I could have a garden. We live at too high an altitude to grow much of anything. Have tried at least having some tomato plants and peppers and squash, etc. But, after trying for a few years have just given up. Hubby has talked about building a green house so maybe if that ever happens I’ll finally get home grown tomatoes again. I sure miss them… one of the things I miss since moving from Ohio to Colorado.

    Your vegetables and salsa look yummy. We planted TWELVE tomato plants this year, by mistake, thought we were buying TWO and ended up with six in each pot. The plants are huge but we don’t all all that many tomatores on them, but I’m hoping that what we do get will taste so good that we’ll want to plant a variety of veggies next year. Thanks for sharing your day’s work.

    That’s so true … the garden won’t wait! I no longer do any canning but seeing your lovely display, stirred memories of years past. I love zuchinni bread and many yrs ago my neighbor gave us zuchinni cookies that were delicious. I have since misplaced the recipe. I would also like your cookie recipe if you will share it with us. I’d rather have a tried and true cookie recipe than a random recipe from the interent. Thanks! Have a GREAT weekend! 🙂

  9. WOW! Looks like you are very busy taking care of your produce!!! I used to grow radishes, onions, green peppers and tomatoes. My husband decided to turn half of the small garden into a strawberry bed last year and the entire garden into strawberries this year. For a second year, we are getting a nice amount of berries.

    Will you post your salsa recipe? I wanted to try to make some this year.
    Our garden is doing fairly well even though we’ve had a cool spring & summer. So far we’ve harvested peas, lettuce, radishes, garlic, rhubarb, strawberries, zucchini, cucumbers, blueberries, raspberries, & marian berries. The tomatoes are just now turning, the green beans will be ready soon. We always plant way more then we can use so we make weekly trips to the food bank with fresh produce which is always appreciated.

    Foliage is growing well, but in generally we just are not getting enough sun this summer (Oregon :). Basil, parsley, and thyme doing well; we would have had some raspberries had the dog not ate them 🙂 Our tomatoes are still green. Maybe we’ll have some before the cooler weather and too much rain hit. Lest you feel sorry for me, don’t 🙂 I _do_ live in Oregon where there is an abundance of farmers who manage to outwit the weather and have wonderful produce. So far we’ve picked over 16 lbs of blueberries and about 6 pounds of raspberries. Blackberries, too, are about to come in, and they (over)grow in abundance in a park nearby 🙂

    Thanks for your answer on the ‘split tomatoes’. I also researched it and found it could be too much water….or not enough water…or other reasons. Left me stumped. Do I water, don’t I water? BTW, I also have zucchini with crushed pineapple, and zucchini/ Gala apple breads in freezer, both made with Splenda. Makes a little heavier bread and doesn’t rise as much, but yummy. I used food processor to shred zuchinni and apples without peeling, made the breads a pretty light green. I also add a handful or two of walnuts.

  14. Yum, yum!! I love salsa on just about everything, and yours looks beautiful. Most people don’t use the term “beautiful” when talking about canning, but I love looking at jars of fresh canned food on my kitchen counter. So you know I’m loven’ how yours looks because you took the extra step by putting on your beautiful labels. You should do a blog candy giveaway for your Salsa — I would love to win some of this as much as a new stamp set!!

    Most, if not all of our tomatoes were wrecked in a severe hail storm we had last week. So not much to work with :<( I would also love to see your recipe for salsa. Have fun!

    I’ve been canning also. We have also been blessed with a wonderful garden so far here in Central KY. I don’t have cute tags on mine though. Maybe I will add some to the jars I give away. Want to craft today since I just returned from Stampaway with lots of new goodies but I had tomatoes, peppers, squash and zucchini waiting on me. Must get the canned today.
